The Culinary Vision of Chef Giovanni Guarneri

The gastronomic concept of Le Graal Cortina is shaped under the consultancy of Chef Giovanni Guarneri, from the renowned Ristorante Don Camillo in Ortigia, Sicily.



His philosophy is rooted in a profound respect for ingredients - capturing their essence, reimagining flavors, becoming familiar with the aromas and above all creating unexpected harmonies. Every dish carries a story: a place, a memory, a tradition reinvented.

Le Monsù

Le Monsù is the fine dining restaurant at Le Graal Cortina, conceived as a place where the culinary gesture becomes a reflection on balance and memory. The name derives from the Sicilian adaptation of the French Monsieur Le Chef, once used for the head chefs of aristocratic residences who greatly influenced the gastronomic tradition of the Bourbon Court.



Here, cuisine works through the memory of taste, reinterpreting familiar flavours through contemporary techniques. Guarneri’s distinctly Italian style blends global influences into what he defines as “new traditions,” guided by an essential approach in which every element contributes to a general balance. The menu combines creations conceived for Cortina with iconic dishes from Don Camillo, such as Spaghetti delle Sirene and Arancin* Liquido, pairing local ingredients with Sicilian notes in compositions that are both unexpected and deeply rooted.

Le Café

For a more informal yet equally refined experience, Le Café blends the soul of a café, a bistrot, and a pâtisserie. Inspired by the great Italian tradition and the convivial spirit of European literary cafés, it is an all-day destination open from morning to midnight.



At the heart of the offering is an honest, flavourful cuisine, with a distinctive Sicilian signature shaped by contemporary sensibilities. From Spaghetti ai tre pomodori Pachino to reinterpretations of iconic traditional dishes, the menu also includes classics such as the Club Sandwich and Caesar Salad, all integrated into an offering that maintains coherence and a strong sense of identity.

Le Graal Bar

Completing the offering is Le Graal Bar, an American bar with a warm, inviting atmosphere, conceived as a place for connection and conversation.



The menu ranges from signature cocktails and artisanal spirits to reinterpretations of classics such as Negroni and Spritz, alongside a curated food selection of delicate canapés and refined pastries.



A space designed to accompany every moment of the day, from aperitivo to after dinner, while maintaining the delicate balance between refinement and warmth that defines the Le Graal experience.
